I miss really good Mexican Food. Arkansas has some. Even the not so good Mexican Food in Arkansas is better than most of the Mexican Food I have had in Vancouver. I decided I better start learning how to make my own.
Mexican Food is just one of those things I like going out to get. Like Sushi. I love the sushi, but I don't want to make it myself. I want someone to make it who is going to detail the details - like making the shaved ginger look like a rose or sticking those jagged swatches of plastic greenery between the sashimi and that stiff shoe string packing material that accompanies most sushi plates.
I made enchiladas last night. Never made them before and was surprised that they were pretty simple to assemble and more versatile than I have seen them used. It was sort of messy - you have to dip the tortilla in the sauce before you roll your stuffing. Saucy fingers.
Here's what I did:
Lean ground beef with chopped onions (cooked)
Grilled sweet peppers, mushroom, onion, asparagus
White kidney beans spiced with smoked paprika, cumin, cayenne pepper
Cheese
corn tortillas: I used the small ones
Enchilada sauce - I opted for a pack of dry mix. I spiced it up with anchioti paste, garlic, jalapenos, cumin etc. At some point I would like to make some of that from scratch if I could.
I made:
4 beef and onion
2 pepper, mushroom, onion, asparagus, white bean
1 cheese
all in the same pan
I heated each tortilla in a cast iron skillet then dipped it into my cooled sauce. Then I spooned the filling and rolled up the tortilla as tightly as I could without ripping the wrapper. The roll goes seam down in the pan.
I then poured 3/4 of the sauce over the entire thing. On top of that I grated cheese. I kept it in a 350 degree oven for about 20 minutes.
It was really good for a first attempt - but I feel I over salted it somehow along the way.
I would like to make this again and test it as a vegan dish. I mean, how could I go wrong? Soy burger stuff rolled in a corn tortilla with fake fromage? Or beans and fake fromage? Even some spicy marinated tofu would be good with that sauce poured over it. I think it would be pretty good whatever I used as long as I watch the salt.
These enchiladas are making me thirsty!

It's a problem that most people would not give a second thought. I have a couch frame. A very old couch frame. A couch that I slept on as a child - then was given to me when I moved out of the house. That puts at least 40 years on the thing right there.
I have no space for the thing. Some of the s - springs are broken. The frame itself is solid as the day it was made. The cushions are yuk and worn. I will never fix it myself - I don't have the tools or the know how. I can't throw it away. I do not know the reason. I just can't.
So, here is the dialog going on in my head about this relic. This dialog has been running in my head for 2 days straight, like it is on a loop.
The couch is old and needs repair. With repair it would be a great couch.
I can't repair it by myself. Too much work and I don't know how to do that stuff.
Even if it was repaired I would have no place to put it.
Maybe I could put it outside and use it out there.
Seems like a waste to have something repaired only to put it outside in the elements.
Maybe I could take it a part and use parts of it for something else.
Like what?
I don't know.
Seems like a waste, though. I can't just throw it away. The frame is still pretty decent.
It's strong, sure, but it's old and needs too much work! The couch is older than you are!
I don't like the idea of it going in the landfill. Maybe I could grow a vine on the frame.

But if it were repaired it would be a great couch...
